Flautas con Consomé

A comforting Mexican dish where crispy rolled tortillas filled with tender meat are paired with a flavorful, aromatic consomé for dipping. Perfect for family dinners or gatherings, this recipe combines crunch with warmth in every bite.

🥩 Ingredients

For the Flautas

  • 2 cups shredded chicken or beef (cooked)
  • 12 corn tortillas
  • 1 cup queso fresco (optional)
  • Oil for frying
  • Salt to taste

For the Consomé

  • 6 cups beef or chicken broth
  • 3 Roma tomatoes
  • 3 guajillo chiles (seeded & soaked)
  • 1 ancho chile (optional, for depth)
  • ½ medium onion
  • 2 cloves garlic
  • 1 small carrot, chopped
  • 1 small potato, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt & pepper to taste

For Garnishes

  • Shredded lettuce
  • Sliced avocado
  • Mexican crema or sour cream
  • Salsa
  • Lime wedges

  • Tortillas: Slightly warm them before rolling to avoid cracks.
  • Meat: Shredded rotisserie chicken or leftover beef works well.
  • Chiles: Guajillo adds color & mild heat, ancho adds smokiness.
  • Oil: Use neutral oil like canola or vegetable.

Step 1: Make the Consomé

  1. In a skillet, roast tomatoes, onion, and garlic until lightly charred.
  2. Blend with soaked chiles, cumin, oregano, and 1 cup of broth until smooth.
  3. Strain mixture into a large pot with the rest of the broth.
  4. Add carrot and potato; simmer for 25–30 minutes. Adjust seasoning.

Step 2: Prepare the Flautas

  1. Warm tortillas slightly to soften.
  2. Fill each tortilla with shredded meat and roll tightly. Secure with toothpicks if needed.
  3. Heat oil in a pan and fry until golden brown and crispy. Drain on paper towels.

Step 3: Assemble & Serve

  1. Place flautas on a plate, top with lettuce, crema, avocado, and salsa.
  2. Serve hot with a side bowl of steaming consomé for dipping.
