Classic Fluffy Pancakes Recipe

Ingredients

  • 1 cup buttermilk (or milk + 1 tsp vinegar/lemon juice as substitute)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (plus more for cooking)
  • 1 teaspoon vanilla extract

Ingredient Notes

  • Buttermilk: Essential for fluffy pancakes, but you can make a quick version with milk and vinegar or lemon juice.
  • Flour: All-purpose flour works best, but you can substitute with whole wheat for a healthier version.
  • Sugar: Adjust depending on how sweet you like your pancakes.

Instructions

Step 1: Mix the dry ingredients

In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Step 2: Mix the wet ingredients

In another bowl, whisk together buttermilk, egg, melted butter, and vanilla extract until smooth.

Step 3: Combine

Pour wet ingredients into dry ingredients. Stir gently until just combined (the batter should be slightly lumpy—don’t overmix).

Step 4: Heat the skillet

Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter.

Step 5: Cook the pancakes

Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges look set, about 2 minutes. Flip and cook for another 1–2 minutes, until golden brown.

Step 6: Serve

Stack pancakes on a plate and serve warm with butter, maple syrup, or your favorite toppings.
