ITALIAN LEMON JAM

Equipment

Ingredients

  • 4 large lemons (preferably organic, unwaxed)
  • 2½ cups granulated sugar
  • 2 cups water
  • 1 tbsp lemon juice (for extra pectin and preservation)

Ingredient Notes

  • Organic lemons: Essential, as you’ll be using the peel — avoid waxed lemons.
  • Sugar: Balances the tartness and helps the jam set properly.
  • Lemon juice: Natural preservative and thickener, enhancing the citrus flavor.
  • Water: Helps soften the peel and extract flavor during boiling.

Instructions

Step 1: Prepare the Lemons

  1. Wash lemons thoroughly and scrub to remove any residue.
  2. Slice lemons thinly, removing seeds.
  3. Place slices in a bowl and cover with water. Let them soak for 4–6 hours (or overnight) to reduce bitterness.

Step 2: Cook the Lemons

  1. Drain soaked lemons and transfer them to a saucepan.
  2. Add 2 cups of water and bring to a boil.
  3. Reduce heat and simmer for about 20 minutes, until peels become tender.

Step 3: Add Sugar and Make the Jam

  1. Stir in the sugar and lemon juice.
  2. Cook over medium heat for 25–30 minutes, stirring occasionally.
  3. When the mixture thickens and coats the back of a spoon, it’s ready.
  4. (Optional: For a smoother texture, blend half of the jam and mix back in.)

Step 4: Store the Jam

  1. Pour hot jam into sterilized jars, leaving ½ inch of space at the top.
  2. Seal jars and invert for 10 minutes to create a vacuum seal.
  3. Allow to cool completely before storing in a cool, dark place.
