This Grilled Chicken Cobb Salad is a classic American salad made with smoky grilled chicken, creamy avocado, crispy bacon, eggs, and blue cheese over a bed of crisp greens. It’s satisfying enough for a full meal — healthy, delicious, and easy to make year-round!

Ingredients

For the Salad:

  • 2 boneless, skinless chicken breasts

  • 6 cups chopped romaine lettuce (or mixed greens)
  • 4 slices cooked bacon, crumbled
  • 2 hard-boiled eggs, sliced
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup blue cheese crumbles (or feta, if preferred)
  • ¼ cup red onion, thinly sliced

For the Dressing:

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional)
  • Salt and black pepper, to taste

Ingredient Notes

  • Chicken: Marinate briefly in olive oil, salt, and pepper for juiciness.
  • Dressing: The tangy vinaigrette balances the rich toppings perfectly.
  • Cheese: Blue cheese gives that traditional Cobb flavor, but feta or cheddar work too!

Instructions

  1. Grill the Chicken:
    Preheat grill or grill pan to medium-high. Brush chicken with olive oil and season with salt and pepper.
    Grill 5–7 minutes per side, until cooked through (165°F internal temp). Let rest 5 minutes, then slice.
  2. Prepare the Salad Base:
    Arrange lettuce on a large platter or in a big salad bowl.
  3. Add the Toppings:
    Neatly arrange grilled chicken slices, bacon, eggs, avocado, tomatoes, onion, and blue cheese on top of the greens in rows or sections.
  4. Make the Dressing:
    In a small bowl, whisk together olive oil, vinegar, Dijon mustard, honey, salt, and pepper until emulsified.
  5. Serve:
    Drizzle dressing over the salad just before serving, or serve it on the side.
