Taco Bell Enchirito

The Enchirito is a classic Taco Bell favorite — a soft flour tortilla stuffed with seasoned beef, beans, and onions, rolled up and smothered in rich enchilada sauce and melted cheese. This homemade version tastes just like the original (even better!) and is quick, cheesy, and comforting. Perfect for weeknight dinners or Tex-Mex cravings!

🧂 Ingredients

Seasoned Beef

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade)
  • ½ cup water

Other Ingredients

  • 6 small flour tortillas
  • 1 cup refried beans
  • ½ cup diced onion
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 can (10 oz) mild red enchilada sauce
  • 1 tbsp oil (if needed for pan)

  • Tortillas: Soft taco-size flour tortillas are perfect.
  • Refried Beans: Warm them so they spread easily.
  • Beef: Drain fat before adding seasoning.
  • Cheese: Cheddar gives classic Taco Bell flavor.

🧑‍🍳 Instructions

1. Cook the Beef

  1. In a skillet, brown ground beef over medium heat.
  2. Drain excess grease.
  3. Stir in taco seasoning + ½ cup water.
  4. Simmer until thickened, about 3–4 minutes.

2. Warm the Beans & Tortillas

  • Heat refried beans until spreadable.
  • Warm tortillas briefly so they roll easily.

3. Assemble the Enchiritos

For each tortilla:

  1. Spread 2–3 tablespoons refried beans in the center.
  2. Add a spoonful of seasoned beef.
  3. Sprinkle diced onion.
  4. Roll up tightly like a burrito.

4. Sauce & Cheese

  1. Place rolled enchiritos seam-side down in a baking dish.
  2. Pour enchilada sauce evenly over the top.
  3. Cover with shredded cheese.

5. Bake

  • Bake at 375°F (190°C) for 10–12 minutes until cheese is melted and bubbly.

6. Serve

Serve hot with extra onions, sour cream, or jalapeños if desired!
