For the rounds:
- 1 sheet puff pastry (thawed)
- 1 wheel Brie cheese (cut into small cubes or rounds)
- 2 tbsp butter (melted)
- 1 clove garlic (finely minced)
- 1 egg (for egg wash)
Toppings:
- ¼ cup dried cranberries (chopped)
- ¼ cup toasted walnuts (chopped)
- 1 tbsp fresh thyme or rosemary (optional)

- 3 tbsp honey
- ½–1 tsp chili flakes (adjust heat)
- Pinch of salt
🔥 Instructions
1. Prep the Puff Pastry
- Preheat oven to 400°F (200°C).
- Cut puff pastry into small circles with a cookie cutter or glass.
- Place on a parchment-lined baking tray.
2. Make the Garlic Butter
Mix:
- Melted butter
- Minced garlic
- Pinch salt & pepper
Brush lightly over each puff pastry circle.
3. Add the Brie
- Place a piece of Brie in the center of each round.
- Fold edges upward slightly or leave open like tartlets.
4. Add Toppings
Over each round, sprinkle:
- Chopped cranberries
- Toasted walnuts
- A few thyme/rosemary leaves (optional)
Brush edges of pastry with egg wash for color.
5. Bake
Bake for 12–15 minutes until golden and bubbly.
6. Make Hot Honey
In a small bowl:
- Warm the honey slightly (microwave 10–15 sec)
- Mix in chili flakes + pinch salt.
7. Finish
Drizzle warm hot honey over baked rounds just before serving.
