Apple Crisp Cheesecake combines three beloved desserts in one: a buttery graham cracker crust, rich and creamy cheesecake, and a cinnamon-spiced apple crisp topping. It’s the perfect fall dessert, holiday showstopper, or anytime treat when you want something truly indulgent.

🥘 Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter

Cheesecake Filling

  • 24 oz (3 blocks) cream cheese, softened
  • ¾ cup sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract

Apple Layer

  • 3 medium apples, peeled and diced
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Crisp Topping

  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup rolled oats
  • ½ tsp cinnamon
  • ½ cup cold butter, cubed

📝 Ingredient Notes

  • Apples: Granny Smith or Honeycrisp work best.
  • Cream cheese: Must be fully softened for smooth texture.
  • Oats: Old-fashioned oats give the best crunch.

👨‍🍳 Instructions

1. Make the crust

  1. Preheat oven to 325°F (165°C).
  2. Mix graham crumbs, sugar, and melted butter.
  3. Press firmly into bottom of springform pan.
  4. Bake 10 minutes, then cool.

2. Prepare apple layer

  1. In a saucepan, combine apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
  2. Cook over medium heat 5–7 minutes until slightly softened. Set aside.

3. Make cheesecake filling

  1. Beat cream cheese and sugar until smooth.
  2. Add eggs one at a time, mixing gently.
  3. Mix in sour cream and vanilla.

4. Assemble cheesecake

  1. Pour cheesecake filling over crust.
  2. Spoon apple mixture evenly on top.

5. Make crisp topping

  1. Mix flour, brown sugar, oats, and cinnamon.
  2. Cut in cold butter until crumbly.
  3. Sprinkle evenly over apples.

6. Bake

Bake 60–70 minutes, until center is slightly set.

7. Cool & chill

Cool at room temperature 2 hours, then refrigerate 4 hours or overnight before slicing.
