Loaded Steak Quesadillas

These Loaded Steak Quesadillas are crispy on the outside, cheesy and juicy on the inside, packed with tender steak, peppers, onions, and bold Tex-Mex flavor. Perfect for dinner, game day, or a quick family meal!

🍳 Equipment

  • Large skillet or grill pan

  • Cutting board & knife

  • Mixing bowl

  • Spatula

🥘 Ingredients

Steak Filling

  • 1 lb flank steak or sirloin (thinly sliced)

  • 1 tbsp olive oil

  • 1 bell pepper (sliced)

  • 1 small onion (sliced)

  • 2 cloves garlic (minced)

  • 1 tsp chili powder

  • 1 tsp cumin

  • ½ tsp paprika

  • Salt and black pepper to taste

  • 1 tbsp lime juice

Quesadillas

  • 8 large flour tortillas

  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • 2 tbsp butter or oil for cooking

Optional Toppings

  • Sour cream

  • Salsa or pico de gallo

  • Guacamole

  • Jalapeños

  • Fresh cilantro


📝 Ingredient Notes

  • Flank steak, skirt steak, or ribeye all work great.

  • Use a mix of cheeses for best melting and flavor.

  • Add mushrooms or corn for extra loaded filling.


👩‍🍳 Instructions

  1. Season the steak: Toss sliced steak with chili powder, cumin, paprika, salt, and pepper.

  2. Cook steak: Heat olive oil in a skillet over high heat. Cook steak 3–4 minutes until browned. Remove and set aside.

  3. Cook veggies: In the same pan, sauté peppers, onions, and garlic until soft. Return steak and add lime juice.

  4. Assemble quesadillas: Place tortilla in a skillet, sprinkle cheese, add steak mixture, then more cheese. Top with another tortilla.

  5. Cook: Heat with butter/oil until golden and crispy, flipping once.

  6. Slice and serve: Cut into wedges and serve with your favorite toppings.
