Slow-baked BBQ pork shoulder is the ultimate comfort food—tender, juicy, and infused with smoky, sweet, and savory flavors. Baking it low and slow allows the connective tissue to break down, resulting in fall-apart meat that’s perfect for sandwiches, tacos, or serving alongside classic BBQ sides. This oven method delivers mouthwatering results without needing a smoker.

  • Marinating Time (optional but recommended): 4–24 hours

  • Cook Time: 4–6 hours

  • Total Time: About 5–7 hours


🍳 Equipment Needed

  • Large roasting pan

  • Aluminum foil

  • Meat thermometer

  • Mixing bowls

  • Measuring spoons & cups

  • Sharp knife

  • Cutting board

  • Basting brush (optional)


🛒 Ingredients

For the Pork

  • 4–6 lbs pork shoulder (bone-in or boneless)

  • 2 tbsp olive oil

  • 1 cup BBQ sauce (your favorite brand or homemade)

Dry Rub

  • 2 tbsp brown sugar

  • 1 tbsp paprika

  • 2 tsp smoked paprika

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tsp black pepper

  • 1 tsp salt

👩‍🍳 Instructions

1️⃣ Prepare the Pork

  1. Pat pork shoulder dry with paper towels.

  2. Rub olive oil evenly over the surface.

2️⃣ Make & Apply Dry Rub

  1. Combine all dry rub ingredients in a bowl.

  2. Generously coat the pork on all sides.

  3. Cover and refrigerate for at least 4 hours (overnight preferred).

3️⃣ Bake Low & Slow

  1. Preheat oven to 300°F (150°C).

  2. Place pork in roasting pan, fat side up.

  3. Cover tightly with foil.

  4. Bake for 4–6 hours, or until internal temperature reaches 195–205°F (90–96°C) for shredding.

4️⃣ Add BBQ Sauce

  1. Remove foil during the last 30 minutes.

  2. Brush generously with BBQ sauce.

  3. Return to oven uncovered to caramelize.

5️⃣ Rest & Shred

  1. Remove from oven and let rest 20–30 minutes.

  2. Shred with two forks.

  3. Toss with additional BBQ sauce if desired.
