Ingredients

For the Roux

  • 1/2 cup vegetable oil or butter
  • 1/2 cup all-purpose flour

For the Gumbo Base

  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups seafood stock or chicken broth
  • 1 can diced tomatoes (optional, Creole style)
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Seafood

  • 1 pound shrimp, peeled and deveined
  • 1/2 pound crab meat
  • 1/2 pound firm white fish, cubed
  • 1 dozen oysters (optional)

Optional Additions

  • 1 cup sliced okra
  • 1 teaspoon file powder (added at the end)
  • Sliced sausage (if making mixed gumbo)

For Serving

  • Cooked white rice
  • Chopped green onions
  • Fresh parsley
  • Hot sauce

Equipment Needed

  • Large heavy pot or Dutch oven
  • Wooden spoon
  • Knife and cutting board
  • Ladle

Instructions

Step 1: Make the Roux

Heat oil in a large heavy pot over medium heat. Add flour and stir constantly with a wooden spoon.

Cook slowly for 20 to 30 minutes, stirring nonstop, until the roux turns deep brown, like chocolate. Do not let it burn.

This step creates the signature gumbo flavor.

Step 2: Add the Holy Trinity

Add onion, bell pepper, and celery directly into the hot roux. Stir well and cook for 5 minutes until softened.

Add garlic and cook 1 minute more.

Step 3: Build the Broth

Slowly pour in stock while stirring to prevent lumps.

Add tomatoes (if using), bay leaves, thyme, paprika, cayenne, salt, and pepper.

Bring to a gentle simmer.

Step 4: Simmer the Gumbo

Cook uncovered for 35 to 45 minutes, stirring occasionally, until flavors deepen and broth thickens slightly.

Add okra during this stage if using.

Step 5: Add Seafood

Add fish first and simmer 5 minutes.

Then add shrimp, crab meat, and oysters. Cook another 5 to 7 minutes until shrimp turn pink and seafood is cooked through.

Do not overcook.

Step 6: Finish

Remove bay leaves.

Stir in file powder if using after turning off heat.

Taste and adjust seasoning.

Step 7: Serve

Spoon cooked rice into bowls.

Ladle hot gumbo over the rice.

Top with green onions, parsley, and hot sauce if desired.
