These Baked Chicken Burritos are crispy on the outside, tender on the inside, and loaded with juicy chicken, melted cheese, and savory Mexican spices.   • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup salsa (mild or spicy)
  • ½ cup corn (optional)
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 6 large flour tortillas
  • Olive oil spray or melted butter (for brushing)

  • Tortillas: Large flour tortillas wrap best without tearing.

Instructions

Step 1: Preheat Oven

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2: Prepare the Filling

  1. In a large bowl, mix together shredded chicken, rice, black beans, cheese, salsa, corn, and all seasonings.
  2. Stir until well combined.

Step 3: Assemble the Burritos

  1. Lay a tortilla flat on a clean surface.
  2. Spoon about ½ cup of filling into the center.
  3. Fold in the sides, then roll up tightly like a burrito.
  4. Place seam-side down on the baking sheet.

Step 4: Bake

  1. Lightly brush or spray each burrito with olive oil or melted butter.
  2. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.

Step 5: Serve

Serve warm with guacamole, sour cream, or extra salsa on the side.
