This Blackberry Cobbler is a true old-fashioned favorite — sweet-tart blackberries baked beneath a soft, buttery topping. It’s simple, rustic, and absolutely delicious served warm with a scoop of vanilla ice cream or whipped cream.

Ingredients

For the Filling:

  • 1 tablespoon cornstarch (for thickening)

For the Batter:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • ½ cup (1 stick) unsalted butter, melted

Ingredient Notes

  • Blackberries: Fresh is best, but frozen works perfectly — just don’t thaw before baking.
  • Cornstarch: Helps the filling thicken and set nicely.
  • Butter: Creates that signature buttery crust when baked.

Instructions

  1. Preheat Oven:
    Set oven to 350°F (175°C).
  2. Prepare the Filling:
    In a bowl, mix blackberries, sugar, lemon juice, and cornstarch. Set aside to let the juices start releasing.
  3. Make the Batter:
    In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk until smooth.
  4. Add Butter:
    Pour melted butter into the bottom of your baking dish. Do not stir.
  5. Assemble the Cobbler:
    Pour the batter over the butter — again, do not stir. Spoon the blackberry mixture evenly over the batter. The batter will rise around the fruit as it bakes.
  6. Bake:
    Bake for 40–45 minutes, or until golden brown and bubbly.
  7. Serve:
    Let cool for 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
