Bobby Flay Salisbury Steak

Ground beef patties simmered in a deeply flavored mushroom and shallot gravy, finished with tangy Worcestershire and fresh herbs.

📝 Ingredients:

For the Steaks:

  • 1 lb (450 g) ground beef (80/20 blend recommended)
  • ½ cup panko breadcrumbs
  • ¼ cup finely chopped onion or shallot
  • 1 large egg
  • 1 Tbsp Worcestershire sauce
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • 1 Tbsp vegetable oil

For the Gravy:

  • 2 Tbsp butter
  • 8 oz mushrooms, sliced (cremini or baby bella)
  • 1 small onion or 2 shallots, thinly sliced
  • 2 Tbsp flour
  • 1½ cups beef broth
  • 1 Tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • Fresh thyme or parsley, chopped
  • Salt & pepper, to taste

  • Beef: An 80/20 mix provides good juiciness.
  • Panko helps bind the patties without weighing them down.
  • Mushrooms & shallots bring depth to the gravy.
  • Worcestershire & Dijon lend tanginess and complexity.

👨‍🍳 Instructions:

1. Make the Patties

In a bowl, combine beef, panko, chopped onion/shallot, egg, Worcestershire, garlic powder, salt, and pepper. Form into 3–4 oval patties, about ¾” thick.

2. Brown the Steaks

Heat oil in a skillet over medium-high. Add patties and sear 3–4 minutes per side until nicely browned. Remove to a plate (they’ll finish cooking in the gravy).

3. Sauté Veggies

Add butter to skillet. Once melted, sauté mushrooms and onions until golden—about 5 minutes.

4. Make the Gravy

Sprinkle flour over veggies, stir to coat, and cook 1 minute. Gradually whisk in beef broth, Worcestershire, and Dijon. Scrape up browned bits. Let simmer until gravy thickens.

5. Finish Cooking

Nestle patties back into skillet. Spoon gravy over them, reduce heat to low, cover, and simmer 5–8 minutes until patties are cooked through (internal temp ~160°F/71°C).

6. Garnish & Serve

Stir in fresh thyme or parsley. Season to taste with salt and pepper. Serve steaks topped with mushroom gravy.

  • Cheesy Variation: Top patties with Swiss cheese in the last minute of cooking and cover to melt.
  • Smoky Boost: Add a pinch of smoked paprika or chipotle powder to the meat mix.
  • Gravy Twist: Deglaze the pan with a splash of red wine or a teaspoon of balsamic before adding broth.
