French Coconut Pie

A rich, buttery French Coconut Pie features a flaky pie crust filled with a sweet, creamy coconut custard. It’s incredibly easy to make and perfect for holidays, family gatherings, or whenever you’re craving a classic Southern-style dessert.

Ingredients

For the Pie

  • 1 unbaked 9-inch pie crust
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted and slightly cooled
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract (optional, for stronger coconut flavor)
  • 1½ cups sweetened shredded coconut
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • ½ cup evaporated milk

Optional Toppings

  • Whipped cream
  • Toasted coconut flakes
  • Fresh berries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the unbaked pie crust into a 9-inch pie plate. Crimp the edges if desired.
  3. In a large bowl, whisk together the sugar, melted butter, eggs, vanilla extract, coconut extract (if using), flour, salt, and evaporated milk until smooth.
  4. Fold in the shredded coconut until evenly combined.
  5. Pour the filling into the prepared pie crust.
  6. Bake for 45–55 minutes, or until the center is set and the top is golden brown.
  7. If the crust begins to brown too quickly, cover the edges with aluminum foil during the last 15–20 minutes of baking.
  8. Remove from the oven and allow the pie to cool completely before slicing. The filling will continue to set as it cools.

Tips for Success

  • Bring the eggs to room temperature for a smoother filling.
  • Use real butter for the richest flavor.
  • Let the pie cool for at least 2 hours before serving for clean slices.
  • Toast extra coconut for garnish to add crunch and deeper coconut flavor.

Storage

  • Refrigerator: Store covered for up to 4 days.
  • Freezer: Wrap tightly and freeze for up to 2 months. Thaw overnight in the refrigerator before serving.

Variations

  • Add ½ cup chopped pecans for a crunchy twist.
  • Stir in ½ cup mini chocolate chips for a chocolate-coconut version.
  • Add 1 teaspoon lemon zest for a brighter flavor.
  • Sprinkle a little cinnamon or nutmeg over the top before baking for warm spice notes.
