Golumpki Soup

Ingredients

  • 1 lb (450 g) ground beef or ground pork (or mix)

  • 1 small onion, chopped

  • 2–3 cloves garlic, minced

  • 4 cups cabbage, chopped

  • 1 cup uncooked rice

  • 1 can (14–15 oz) diced tomatoes

  • 4 cups beef broth

  • 1 cup tomato sauce

  • 1 tbsp paprika

  • 1 tsp salt (adjust to taste)

  • ½ tsp black pepper

  • 1 tsp dried oregano or thyme

  • 1–2 tbsp brown sugar (optional, balances acidity)

  • 1 tbsp olive oil


Instructions

  1. Brown the meat
    Heat oil in a large pot. Add ground meat and cook until browned. Drain excess fat if needed.

  2. Add aromatics
    Stir in onion and garlic. Cook for about 2–3 minutes until soft.

  3. Add vegetables & liquid
    Add chopped cabbage, diced tomatoes, tomato sauce, broth, and spices.

  4. Add rice
    Stir in uncooked rice and bring to a boil.

  5. Simmer
    Reduce heat and simmer for 25–30 minutes, until rice and cabbage are tender.

  6. Adjust flavor
    Taste and add salt, pepper, or brown sugar if needed.


Optional additions

  • Carrots or celery for extra vegetables

  • A splash of lemon juice for brightness

  • Fresh parsley on top
