Instructions
Step 1: Prepare the Lemons
- Wash lemons thoroughly and scrub to remove any residue.
- Slice lemons thinly, removing seeds.
- Place slices in a bowl and cover with water. Let them soak for 4–6 hours (or overnight) to reduce bitterness.
Step 2: Cook the Lemons
- Drain soaked lemons and transfer them to a saucepan.
- Add 2 cups of water and bring to a boil.
- Reduce heat and simmer for about 20 minutes, until peels become tender.
Step 3: Add Sugar and Make the Jam
- Stir in the sugar and lemon juice.
- Cook over medium heat for 25–30 minutes, stirring occasionally.
- When the mixture thickens and coats the back of a spoon, it’s ready.
- (Optional: For a smoother texture, blend half of the jam and mix back in.)
Step 4: Store the Jam
- Pour hot jam into sterilized jars, leaving ½ inch of space at the top.
- Seal jars and invert for 10 minutes to create a vacuum seal.
- Allow to cool completely before storing in a cool, dark place.
