  • 1 (4 oz) can diced green chilies
  • 1 cup beef broth (or water)
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Step 1: Cook the Beef

  • Heat olive oil in a large skillet over medium heat.
  • Add ground beef and onion, cooking until beef is browned.
  • Stir in garlic and cook for 1 more minute. Drain excess fat if needed.

Step 2: Build the Sauce

  • Stir in diced tomatoes, tomato sauce, green chilies, beef broth, and taco seasoning.
  • Mix well and bring to a simmer.

Step 3: Add Pasta Shells

  • Add uncooked pasta shells directly to the skillet.
  • Cover and cook for 15–18 minutes, stirring occasionally, until shells are tender and sauce thickens.

Step 4: Finish with Cheese

  • Stir in half the shredded cheese until melted.
  • Sprinkle remaining cheese on top, cover for 2 minutes until gooey.

Step 5: Serve

  • Garnish with fresh cilantro or green onions.
