Potato lasagna with chicken

🧂 Ingredients

  • 3 medium potatoes, thinly sliced
  • 2 cups cooked shredded chicken (boiled or rotisserie)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream (or milk for a lighter version)
  • ½ cup chicken broth
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped parsley (for garnish)

  • Potatoes: Use firm potatoes like Yukon Gold or Russet for the best texture.

Step 1: Prepare the Chicken Filling

Heat olive oil and butter in a skillet over medium heat.
Add chopped onion and garlic; sauté until fragrant.
Stir in shredded chicken, salt, pepper, paprika, and Italian seasoning. Cook for 3–4 minutes.
Pour in heavy cream and chicken broth, and simmer until the sauce slightly thickens. Remove from heat.

Step 2: Prepare the Potatoes

Peel and thinly slice the potatoes (about ⅛ inch thick). Pat dry with paper towels.

Step 3: Assemble the Lasagna

Grease a baking dish with butter or oil.
Layer potato slices on the bottom, slightly overlapping.
Spread a portion of the creamy chicken mixture over the potatoes.
Sprinkle mozzarella and parmesan cheese.
Repeat layers (potato → chicken → cheese) until ingredients are used up. Finish with cheese on top.

Step 4: Bake

Cover with foil and bake in a preheated oven at 375°F (190°C) for 30 minutes.
Remove foil and bake for an additional 10–15 minutes until the top is golden and bubbly.

Step 5: Serve

Let rest for 5 minutes before slicing. Garnish with chopped parsley and enjoy warm!
