These Potato Rolls with Chicken are crispy on the outside, soft and fluffy inside, and packed with flavorful chicken filling. Perfect as a snack, appetizer, or lunchbox treat—and they fry beautifully or bake well too.

🍳 Ingredients

Potato Dough

  • 3 medium potatoes, boiled & mashed

  • 2 tbsp cornflour (cornstarch)

  • 2 tbsp all-purpose flour

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder (optional)

Chicken Filling

  • 1 cup cooked chicken, finely shredded

  • 1 small onion, finely chopped

  • 1 green chili, chopped (optional)

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika or red chili powder

  • ½ tsp cumin powder

  • 1 tbsp oil

  • 1 tbsp soy sauce (optional)

  • 1 tbsp chopped coriander

For Coating & Frying

  • 1 egg, beaten

  • Breadcrumbs as needed

  • Oil for frying


👩‍🍳 Instructions

1. Prepare the Filling

  • Heat oil in a pan.

  • Add onion and sauté until soft.

  • Add chicken, salt, pepper, paprika, cumin, soy sauce, and green chili.

  • Cook 3–4 minutes until dry.

  • Turn off heat, mix in coriander, and let cool.


2. Make the Potato Dough

  • In a bowl, combine mashed potatoes, cornflour, flour, salt, pepper, and garlic powder.

  • Mix until soft, smooth, and non-sticky.


3. Shape the Rolls

  • Take a portion of potato dough and flatten it in your palm.

  • Place chicken filling in the center.

  • Roll tightly into a log shape.


4. Coat

  • Dip each roll into beaten egg.

  • Roll in breadcrumbs until fully coated.


5. Fry or Bake

Frying:

  • Heat oil on medium.

  • Fry rolls until golden brown on all sides.

Baking (Healthier):

  • Brush with oil.

  • Bake at 200°C (390°F) for 18–20 minutes, turning once.
