Instructions
Step 1: Cook the Rice
- Rinse the rice under cold water.
- In a medium saucepan, bring chicken broth and salt to a boil.
- Stir in the rice, reduce heat to low, cover, and cook for 18–20 minutes.
- Remove from heat and let stand for 5 minutes. Fluff with a fork.
Step 2: Season and Sear the Chicken
- Pat the chicken dry with paper towels.
- Season both sides with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 4–5 minutes per side until golden brown.
- Remove chicken and set aside.
Step 3: Make the Gravy
- In the same skillet, melt butter.
- Add onion and bell pepper; cook until softened, about 5 minutes.
- Stir in garlic and cook for 30 seconds.

- Add heavy cream, thyme, paprika, salt, and pepper.

Step 4: Smother the Chicken
- Return the chicken to the skillet.
- Spoon the gravy over the chicken.
- Cover and simmer on low heat for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Step 5: Serve
- Spoon fluffy rice onto serving plates.
- Place a piece of chicken over the rice.
- Generously ladle the creamy gravy on top.
