🧾 Ingredients (serves 2)

Seafood:

  • 2 lobster tails (4–5 oz each), thawed if frozen
  • 8 sea scallops (large, dry-packed), patted dry

Garlic Butter & Herbs:

  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme or tarragon (optional)
  • Juice of 1/2 lemon
  • Salt and freshly ground pepper, to taste
  • Lemon wedges, for serving

🧂 Ingredient Notes

  • Dry scallops sear better—avoid “wet-packed” ones if possible.
  • Lobster tails can be cut in half lengthwise or removed from the shell entirely for easier cooking.
  • Fresh herbs give the best flavor, but dried herbs (1/3 amount) can be used in a pinch.

👨‍🍳 Instructions

1. Prepare the Lobster Tails

  • With kitchen shears, cut down the top shell of each lobster tail and gently pull the meat out to rest on top (but still attached). Season lightly with salt and pepper.

2. Sear the Scallops

  • Pat scallops very dry and season with salt and pepper.
  • Heat 1 tbsp olive oil and 1 tbsp butter in a hot skillet.
  • Sear scallops for 2–3 minutes per side until golden-brown crust forms and the center is just opaque. Remove from skillet and set aside.

3. Cook the Lobster

  • In the same skillet, add another tbsp olive oil and place lobster tails meat-side down.
  • Sear for 1–2 minutes, then flip. Add a tbsp of butter and 1 clove of garlic.
  • Baste the lobster with the butter for 2–3 minutes until the meat is opaque and tender.

4. Make Garlic Butter Sauce

  • In a small saucepan, melt remaining 2 tbsp butter with garlic over low heat.
  • Add lemon juice and herbs, stir and simmer for 1 minute.
  • Return scallops and lobster to the skillet, drizzle with garlic herb butter. Toss gently or spoon sauce over each piece.
