Crockpot Sausage and Potatoes with Onion

Posted on February 25, 2026

Crockpot Sausage and Potatoes with Onion is a simple, budget-friendly comfort meal that cooks low and slow until the potatoes are tender and the sausage is juicy and flavorful. Perfect for busy days — just toss everything in the slow cooker and let it do the work. This hearty one-pot dish is especially popular for family dinners and meal prep.

⏱️ Prep Time

  • Prep: 10 minutes

  • Cook LOW: 6–7 hours

  • Cook HIGH: 3–4 hours

  • Total: hands-off slow cooking

🧰 Equipment Needed

  • Slow cooker / Crockpot (4–6 quart)

  • Cutting board

  • Knife

  • Mixing spoon

🥄 Ingredients

  • 1½ lb smoked sausage, sliced into rounds

  • 2 lb potatoes, cut into bite-size chunks

  • 1 large onion, sliced

  • 3 cloves garlic, minced

  • 2 tbsp olive oil or melted butter

  • 1 tsp paprika

  • 1 tsp Italian seasoning

  • ½ tsp black pepper

  • ½ tsp salt (adjust depending on sausage saltiness)

  • ½ cup chicken broth

Optional add-ins

  • 1 bell pepper, sliced

  • ½ tsp chili flakes for heat

  • ½ cup shredded cheese for topping

📝 Ingredient Notes

✅ Smoked sausage works best (kielbasa, turkey sausage, or beef sausage)
✅ Use Yukon Gold or red potatoes — they hold shape better
✅ Cut potatoes evenly so they cook at the same speed
✅ Broth prevents drying and adds flavor
