This baked pimento cheese dip is rich, creamy, and irresistibly cheesy with a golden, bubbly top. A true Southern classic—simple ingredients, big flavor.

🧾 Ingredients

  • 2 cups sharp cheddar cheese, freshly grated

  • 1 cup Monterey Jack or Colby Jack cheese, grated

  • 4 oz cream cheese, softened

  • ½ cup mayonnaise

  • ½ cup diced pimentos, drained

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp cayenne pepper (optional, for heat)

  • Salt & black pepper, to taste

  • 2 tbsp chopped green onions (optional, for topping)


👩‍🍳 Instructions

1. Preheat

  • Preheat oven to 375°F (190°C)

  • Lightly grease a small baking dish or skillet

2. Mix

  • In a bowl, combine cheddar, Monterey Jack, cream cheese, and mayo

  • Stir in pimentos, garlic powder, onion powder, cayenne, salt, and pepper

  • Mix until smooth and well combined

3. Bake

  • Transfer mixture to baking dish

  • Bake uncovered for 20–25 minutes, until hot and bubbly

  • Broil for 1–2 minutes if you want a golden top

4. Garnish & Serve

  • Sprinkle with green onions

  • Serve warm
