Fluffy Milkman Chubbs are soft, pillowy sweet buns made with rich milk dough and filled or topped with creamy sweetness. They are light, airy, buttery, and perfect for breakfast, tea time, or dessert. The name may sound playful, but these treats are wonderfully delicious and comforting. If you love bakery-style milk buns with a tender crumb, this recipe is for you.

Preparation Time

  • Prep Time: 25 minutes
  • Rising Time: 1 hour 30 minutes
  • Bake Time: 18–22 minutes
  • Total Time: About 2 hours 15 minutes

Yield

  • Makes 12 fluffy buns

Ingredients

For the Dough

  • 4 cups all-purpose flour
  • 1 cup warm milk
  • 1/4 cup sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 large egg
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

For the Cream Filling (Optional)

  • 1 cup whipped cream or thick cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla

For Topping

  • 2 tablespoons melted butter
  • Powdered sugar for dusting

Equipment Needed

  • Large mixing bowl
  • Measuring cups and spoons
  • Baking tray
  • Parchment paper
  • Rolling pin
  • Stand mixer (optional)
  • Pastry brush

Instructions

Step 1: Activate the Yeast

In a bowl, combine warm milk, sugar, and yeast. Stir gently and let sit for 5 to 10 minutes until foamy. This means the yeast is active and ready.

Step 2: Make the Dough

Add egg, vanilla, flour, and salt to the yeast mixture. Mix until a shaggy dough forms. Add softened butter and knead for 8 to 10 minutes until the dough becomes smooth, soft, and elastic.

If using a stand mixer, knead on medium speed for about 6 minutes.

Step 3: First Rise

Place dough in a lightly greased bowl. Cover with a towel or plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.

Step 4: Shape the Buns

Punch down the dough gently and divide into 12 equal pieces. Roll each piece into a smooth ball and place on a lined baking tray with some space between them.

Cover again and let rise for 30 minutes until puffy.

Step 5: Bake

Preheat oven to 180°C (350°F).

Brush tops lightly with milk or egg wash for shine. Bake for 18 to 22 minutes until golden brown.

Step 6: Cool and Fill

Let buns cool slightly. Slice each bun halfway and fill with sweetened whipped cream if desired.

Step 7: Finish

Brush warm buns with melted butter and dust with powdered sugar.

Serve warm or chilled.

Tips for Best Results

  • Use warm milk, not hot, to avoid killing the yeast.
  • Knead well for soft and fluffy texture.
  • Let dough rise fully for airy buns.
  • Add jam, custard, or chocolate filling for variety.
  • Best enjoyed fresh the same day.
