🧾 Ingredients (Makes 12 muffins)

Dry Ingredients:

  • 1½ cups rolled oats (old-fashioned)
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt

Wet Ingredients:

  • 2 large eggs
  • ½ cup unsweetened applesauce
  • ⅓ cup maple syrup or honey
  • ½ cup milk (any kind – dairy or non-dairy)
  • ¼ cup melted coconut oil or butter
  • 1 tsp vanilla extract

Add-ins:

  • 1½ cups finely chopped or grated apple (about 1–2 apples)
  • Optional: ½ cup chopped walnuts, pecans, or raisins

1. Preheat & Prep

  • Preheat oven to 350°F (175°C).
  • Line or grease a 12-cup muffin tin.

2. Mix Dry Ingredients

  • In a large bowl, combine:
    • Oats
    • Flour
    • Baking powder
    • Baking soda
    • Cinnamon
    • Nutmeg
    • Salt

3. Mix Wet Ingredients

  • In another bowl, whisk together:
    • Eggs
    • Applesauce
    • Maple syrup or honey
    • Milk
    • Melted coconut oil or butter
    • Vanilla extract

4. Combine & Fold

  • Pour the wet ingredients into the dry ingredients.

5. Bake

  • Divide batter evenly among 12 muffin cups (they’ll be quite full).
