BAKED BEEF AND BEAN ENCHILADAS

These Baked Beef and Bean Enchiladas are packed with seasoned ground beef, hearty beans, rich enchilada sauce, and loads of melted cheese. Perfect for busy weeknights, potlucks, or meal prep — and a guaranteed crowd-pleaser for your USA & UK audience.

🥄 Ingredients

For the Filling:

  • 1 lb (450g) ground beef

  • 1 small onion (finely chopped)

  • 2 cloves garlic (minced)

  • 1 cup canned black beans (drained & rinsed)

  • 1 cup canned pinto beans (drained & rinsed)

  • 1 packet taco seasoning (or 2 tbsp homemade blend)

  • ½ cup water

For Assembling:

  • 8–10 flour tortillas

  • 2 cups red enchilada sauce

  • 2 cups shredded cheddar or Mexican blend cheese

  • ½ cup sour cream (optional topping)

  • Fresh cilantro (optional garnish)

Step 1: Prepare the Filling

  1. In a large skillet, cook ground beef over medium heat until browned.

  2. Add chopped onion and cook until soft.

  3. Stir in garlic and cook 30 seconds.

  4. Add beans, taco seasoning, and water.

  5. Simmer for 5–7 minutes until thickened.

Step 2: Assemble

  1. Preheat oven to 375°F (190°C).

  2. Spread ½ cup enchilada sauce in the bottom of baking dish.

  3. Spoon beef mixture onto each tortilla.

  4. Roll tightly and place seam-side down in dish.

  5. Pour remaining sauce over top.

  6. Sprinkle generously with cheese.

Step 3: Bake

  • Cover with foil and bake for 20 minutes.

  • Remove foil and bake 5 more minutes until cheese is bubbly.

Let rest 5–10 minutes before serving.
