This Magic Tomato Salad is fresh, juicy, tangy, and slightly sweet with a simple dressing that makes tomatoes taste incredible. Perfect as a summer side dish, BBQ salad, or light lunch.

Salad

  • 4 cups fresh tomatoes (cherry, grape, or sliced ripe tomatoes)

  • ¼ cup thinly sliced red onion

  • 2 tbsp chopped fresh basil or parsley

Magic Dressing

  • 3 tbsp olive oil

  • 1 tbsp red wine vinegar (or apple cider vinegar)

  • 1 tsp honey or sugar

  • 1 small clove garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • Pinch of chili flakes (optional)

  • Use ripe, in-season tomatoes for best flavor.

  • Cherry or grape tomatoes hold their shape better.

  • Fresh basil gives that classic Mediterranean taste.

  1. Prepare tomatoes: Cut tomatoes into halves or slices and place in a bowl.
