🍽️ Equipment Needed

  • Large pot (for boiling potatoes)
  • Frying pan or skillet
  • Bowl for mixing
  • Baking tray (if baking)
  • Rolling surface or board

🧾 Ingredients (Makes 8–10 rolls)

For the Potato Dough:

  • 1 kg (2.2 lbs) potatoes, peeled and chopped
  • 1 egg
  • 2–3 tbsp flour (or as needed)
  • Salt & pepper to taste
  • Optional: pinch of nutmeg or garlic powder

For the Minced Meat Filling:

  • 300–350 g (10–12 oz) ground beef or pork
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • Salt & pepper to taste
  • 1 tbsp oil (for frying)
  • Optional: herbs like parsley, thyme, or dill

Optional Coating:

  • 1 egg, beaten (for egg wash or breading)
  • Bread crumbs (for extra crunch, if frying or baking)

👨‍🍳 Instructions

1. Make the Potato Dough

  • Boil potatoes in salted water until tender. Drain and mash while hot.
  • Let cool slightly, then mix in 1 egg, salt, pepper, and just enough flour to form a pliable dough. (Not too sticky, but not dry.)

2. Prepare the Meat Filling

  • In a skillet, heat oil and sauté onion and garlic until soft.
  • Add ground meat and cook until browned.
  • Season with salt, pepper, and herbs. Let cool slightly.

3. Form the Rolls

  • Take a portion of potato dough (about 1/4 cup), flatten into a circle in your palm or on a floured surface.
  • Add 1–2 tsp of the meat filling in the center.
  • Roll or fold to seal the edges — like a mini burrito or croquette. Shape into a cylinder or oval.

4. Cook the Rolls

  • Pan-fry: Heat a little oil in a skillet. Fry the rolls until golden brown on all sides.
  • Bake (optional): Preheat oven to 400°F (200°C). Place rolls on a parchment-lined tray, brush with egg wash or oil, and bake for ~20–25 minutes until golden.
