This Super Rich Caramel Pudding is smooth, silky, and melt-in-your-mouth creamy with a deep golden caramel flavor. It’s an elegant classic dessert that’s surprisingly easy to make—perfect for dinner parties, holidays, or special occasions.

🥘 Ingredients

🍯 For Caramel

  • 1 cup granulated sugar

  • ¼ cup water

🥛 For Pudding

  • 2 cups whole milk

  • 1 cup heavy cream

  • ¾ cup sugar

  • 4 large eggs

  • 2 egg yolks

  • 1 tsp vanilla extract

  • Pinch of salt


👩‍🍳 Instructions

Step 1: Make Caramel

  1. In a saucepan, combine sugar and water over medium heat.

  2. Cook without stirring until it turns deep amber.

  3. Quickly pour caramel into ramekins and swirl to coat bottoms.


Step 2: Make Pudding Custard

  1. Heat milk and cream in a saucepan until warm (do not boil).

  2. In a bowl, whisk eggs, egg yolks, sugar, vanilla, and salt.

  3. Slowly pour warm milk mixture into eggs while whisking (to temper).


Step 3: Bake

  1. Pour custard over caramel in ramekins.

  2. Place ramekins in a baking dish and fill with hot water halfway up sides (water bath).

  3. Bake at 325°F (160°C) for 35–40 minutes until set but slightly jiggly.


Step 4: Chill

  1. Cool to room temperature.

  2. Refrigerate for at least 4 hours or overnight.


Step 5: Serve

Run a knife around edges, invert onto a plate, and drizzle extra caramel sauce if desired.
