One-Pan Chicken, Potatoes & Green Beans

This one-pan chicken dinner is a family favorite because it’s simple, hearty, and requires almost no cleanup. Juicy chicken breasts, tender potatoes, and crisp green beans are all baked together in one dish, flavored with butter and seasonings. Perfect for a busy weeknight meal!

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 lb baby potatoes (halved or quartered if large)
  • 12 oz fresh green beans, trimmed
  • ½ cup unsalted butter, melted
  • 1 packet Italian dressing mix (or 2 Tbsp homemade seasoning blend*)

Ingredient Notes

  • Chicken: Breasts are lean; thighs stay juicier—use whichever you prefer.
  • Potatoes: Baby red or Yukon gold potatoes work best.
  • Seasoning mix: If you don’t have a packet, make your own with 1 tsp each garlic powder, onion powder, dried basil, oregano, parsley, plus ½ tsp paprika and salt.
  • Butter: Olive oil can be swapped for a lighter option.

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Arrange in pan: Place chicken in the center of a greased 9×13 pan. Add potatoes on one side and green beans on the other.
  3. Mix seasoning: In a bowl, combine melted butter with Italian seasoning mix.
  4. Pour over dish: Drizzle the butter mixture evenly over chicken, potatoes, and green beans.
  5. Bake uncovered for 50–55 minutes, until chicken reaches 165°F (74°C) and potatoes are tender.
  6. Serve hot straight from the pan.
