These Zucchini Garlic Bites are a healthy, flavor-packed snack or appetizer that’s crispy on the outside and tender on the inside. They’re easy to make, a great way to use up fresh zucchini, and perfect for dipping in marinara or ranch sauce. A family-friendly recipe that’s also low-carb and keto-friendly!

Ingredients

  • 2 medium zucchini, grated
  • 1 large egg
  • ½ cup grated parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ⅓ cup almond flour (or breadcrumbs if not keto)
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper

Ingredient Notes

  • Zucchini – Make sure to squeeze out excess water; otherwise, bites will turn soggy.
  • Cheese – Parmesan gives a nutty flavor, while mozzarella adds melty texture.
  • Flour – Almond flour keeps it keto; breadcrumbs make it crispier if you’re not low-carb.
  • Garlic – Freshly minced garlic gives the best flavor.

Instructions

  1. Prep Zucchini – Grate zucchini, place in a towel, and squeeze out as much moisture as possible.
  2. Mix Batter – In a mixing bowl, combine zucchini, egg, parmesan, mozzarella, almond flour, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Form Bites – Scoop 1 tablespoon of mixture and shape into small balls or patties. Place on a parchment-lined baking sheet.
  4. Bake or Air Fry –
    • Oven: Bake at 400°F (200°C) for 18–20 minutes, flipping halfway, until golden brown.
    • Air Fryer: Cook at 375°F (190°C) for 12–14 minutes, flipping once.
  5. Serve – Enjoy warm with marinara sauce, ranch, or garlic dip.
