AVOCADO GARLICKY MUSHROOM TOAST!

This Avocado Garlicky Mushroom Toast is rich, earthy, and packed with bold flavors. Creamy smashed avocado meets sautéed mushrooms infused with garlic and herbs — all layered on top of crisp, rustic toast. It’s a wholesome, plant-based breakfast, brunch, or light dinner that feels both fancy and comforting.

Equipment

Ingredients

🥑 For the Avocado Base:

  • 2 ripe avocados
  • ½ lemon or lime, juiced
  • Salt & black pepper, to taste
  • Optional: pinch of chili flakes or smoked paprika

🍄 For the Garlicky Mushrooms:

  • 8 oz mushrooms (cremini, button, or mixed), sliced
  • 2 tbsp olive oil or butter
  • 2–3 garlic cloves, minced
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • **Salt & pepper, to taste
  • Optional: splash of balsamic vinegar or soy sauce

🍞 For the Toast:

  • 4 slices sourdough, rye, or whole grain bread
  • Olive oil or butter (for brushing, optional)

🧑‍🍳 Optional Toppings:

  • Fresh herbs (parsley, chives, microgreens)
  • Chili flakes
  • Soft-boiled egg or poached egg (for extra protein)
  • Vegan parmesan or feta crumbles
  • Drizzle of truffle oil (luxurious!)

Instructions

1️⃣ Toast the Bread

  • Toast your bread slices until golden and crisp. Optionally, brush with olive oil or butter before toasting in a skillet or oven.

2️⃣ Make the Smashed Avocado

  • Scoop avocado into a bowl. Add lemon/lime juice, salt, pepper, and any seasonings you like.
  • Mash with a fork until creamy but slightly chunky. Set aside.

3️⃣ Cook the Garlicky Mushrooms

  • Heat olive oil or butter in a skillet over medium heat.
  • Add mushrooms and cook undisturbed for 2–3 minutes to get color.
  • Stir occasionally and cook for 7–10 minutes until golden and softened.
  • Add garlic, thyme, salt, and pepper. Sauté for 1–2 more minutes.
  • Optional: Add a splash of balsamic or soy sauce for extra umami. Remove from heat.

4️⃣ Assemble the Toast

  • Spread mashed avocado onto each toast slice.
  • Pile garlicky mushrooms on top.
  • Add optional toppings as desired (herbs, chili flakes, egg, etc.).
