  • 2 lbs beef chuck, cut into 1½-inch cubes

  • 3 cloves garlic, minced

  • 3 cups beef broth

  • 1 cup water (or more broth)

  • 2 tbsp tomato paste

  • 1 tsp Worcestershire sauce

  • 1 tsp dried thyme

  • 1 bay leaf

  • 4 carrots, sliced

  • 3 potatoes, peeled & cubed

  • 2 stalks celery, sliced (optional)

  • 1 cup frozen peas (optional)

  1. Season & Brown Beef
    Toss beef with flour, salt, and pepper.
    Heat oil in a large pot or Dutch oven over medium-high heat.
    Brown beef in batches until deeply browned. Remove and set aside.

  2. Sauté Aromatics
    In the same pot, add onion and cook until soft.
    Add garlic and cook for 30 seconds until fragrant.

  3. Build the Stew
    Stir in tomato paste and cook 1 minute.
    Add broth, water, Worcestershire sauce, thyme, and bay leaf.
    Return beef to the pot and bring to a gentle boil.

  4. Simmer
    Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.

  5. Add Vegetables
    Add carrots, potatoes, and celery.
    Cover and simmer another 35–45 minutes, until beef is fork-tender.

    Stir in peas (if using) and cook 5 minutes.
