Ingredients

For the Dough:

  • 3 ½ cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast
  • ¼ cup warm water
  • ¾ cup warm milk
  • ¼ cup granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 1 egg
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • Oil for frying

For Coating:

  • 1 cup granulated sugar
  • 1 teaspoon cinnamon (optional)

For Glaze (Optional):

  • 1 ½ cups powdered sugar
  • 3 tablespoons milk
  • ½ teaspoon vanilla extract

Ingredient Notes

  • Warm water should be lukewarm, not hot, to activate the yeast properly.

Instructions

Step 1: Activate the Yeast

In a small bowl, combine warm water and yeast. Let it sit for 5 to 10 minutes until foamy. This shows the yeast is active and ready to use.

Step 2: Make the Dough

In a large mixing bowl, combine flour, sugar, and salt. Add warm milk, softened butter, egg, vanilla extract, and the yeast mixture. Mix until a soft dough forms.

Step 3: Knead the Dough

Transfer dough to a lightly floured surface and knead for 8 to 10 minutes until smooth and elastic. You can also use a stand mixer with a dough hook.

Step 4: First Rise

Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1 hour or until doubled in size.

Step 5: Shape the Doughnuts

Roll dough to about ½-inch thickness. Use a doughnut cutter or two round cutters to cut doughnut shapes. Gather scraps and reroll if needed.

Place shaped doughnuts on parchment paper and cover lightly.

Step 6: Second Rise

Let shaped doughnuts rise again for 30 minutes until puffy.

Step 7: Fry the Doughnuts

Heat oil in a deep pot to 350°F (175°C). Fry doughnuts 1 to 2 minutes per side until golden brown. Do not overcrowd the pot.

Remove with a slotted spoon and place on paper towels.

Step 8: Coat or Glaze

While still warm, roll doughnuts in sugar or dip in glaze. Let glazed doughnuts rest for a few minutes before serving.
