Ingredients

For the Cake Layers

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter (softened)
  • 1 3/4 cups sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk

Mango Filling

  • 2 cups mango puree (fresh or canned)
  • 2 tablespoons sugar (optional)
  • 1 tablespoon cornstarch (to thicken)
  • 2 tablespoons water

  • 1/2 cup passionfruit pulp (with seeds or strained)
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Passion fruit


Frosting

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Step 1: Bake the Cake Layers

  1. Preheat oven to 350°F (175°C).
  2. Grease and line 2–3 round cake pans.
  3. Mix flour, baking powder, and salt.
  4. In another bowl, beat butter and sugar until fluffy.
  5. Add eggs one at a time, then vanilla.
  6. Alternate adding dry ingredients and milk.
  7. Pour into pans and bake 25–30 minutes.
  8. Cool completely.

Step 2: Make Mango Filling

  1. Heat mango puree and sugar.
  2. Add cornstarch slurry and stir until thick.
  3. Cool completely before using.

Step 3: Make Passionfruit Layer

  1. Heat passionfruit pulp, sugar, and lemon juice.
  2. Add cornstarch slurry and cook until slightly thick.
  3. Cool fully.

Step 4: Whip Frosting

Beat cream, powdered sugar, and vanilla until soft peaks form.


Step 5: Assemble the Cake

  1. Place first cake layer on plate.
  2. Spread mango filling.
  3. Add second layer, spread passionfruit filling.
  4. Add final layer.
  5. Frost entire cake with whipped cream.
  6. Chill for at least 2–3 hours.
