🛒 Ingredients

  • 1½ lb ground beef (or chicken)

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 tbsp taco seasoning

  • 1 cup black beans, rinsed

  • 1 cup corn kernels

  • 1½ cups salsa or enchilada sauce

  • 2 cups shredded Mexican-blend cheese

  • 8–10 corn or flour tortillas

  • Chopped cilantro

  • Jalapeños

1️⃣ Cook the Meat

  • Preheat oven to 375°F (190°C)

  • Brown beef with onion & garlic

  • Stir in taco seasoning, beans, corn & salsa

  • Simmer 5 minutes

2️⃣ Assemble

  • Lightly grease a baking dish

  • Layer tortillas → meat mixture → cheese

  • Repeat layers, finishing with cheese

3️⃣ Bake

  • Cover with foil, bake 25 minutes

  • Uncover and bake 10–15 minutes until bubbly
