Old-Fashioned Meatloaf with Brown Gravy

This classic Old-Fashioned Meatloaf is juicy, tender, and full of savory flavor, topped with rich homemade brown gravy. Perfect comfort food for family dinners!

🥘 Ingredients

Meatloaf

  • 2 lbs ground beef (80/20 or 85/15)

  • 1 cup breadcrumbs or crushed crackers

  • 1 cup milk

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 2 eggs

  • ¼ cup ketchup

  • 2 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • 1 tbsp chopped parsley (optional)

Meatloaf Glaze

  • ⅓ cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp mustard

Brown Gravy

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 cups beef broth

  • Salt & black pepper to taste


📝 Ingredient Notes

  • Use 80/20 ground beef for juicy meatloaf.

  • Milk and breadcrumbs make the meatloaf tender.

  • Add ground pork for extra flavor (optional).


👩‍🍳 Instructions

Meatloaf

  1. Preheat oven: 350°F (175°C). Grease a loaf pan.

  2. Make panade: Mix breadcrumbs and milk; let soak 2 minutes.

  3. Mix: Add beef, onion, garlic, eggs, ketchup, Worcestershire, salt, pepper, paprika, and parsley. Mix gently.

  4. Shape: Press into loaf pan or shape on a baking sheet.

  5. Top with glaze: Mix glaze ingredients and spread on top.

  6. Bake: 60–70 minutes until internal temp reaches 160°F (71°C).

  7. Rest: Let rest 10 minutes before slicing.

Brown Gravy

  1. Melt butter in a skillet over medium heat.

  2. Whisk in flour and cook 1 minute.

  3. Slowly whisk in beef broth until smooth.

  4. Simmer 3–5 minutes until thickened. Season with salt and pepper.
