Sausage Gravy Breakfast Pizza

This Breakfast Pizza features a warm, creamy sausage gravy base instead of tomato sauce, topped with fluffy scrambled eggs, melty cheese, and your favorite breakfast toppings on a golden crust. It’s everything you love about a full country breakfast — in pizza form!

🍳 Equipment:

📝 Ingredients:

For the Pizza:

  • 1 pound pizza dough (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 2 tablespoons milk or cream
  • 2 tablespoons butter (for scrambling)
  • 1/4 cup cooked and crumbled bacon (optional)
  • Fresh chives or green onions for garnish (optional)

For the Sausage Gravy:

  • ½ pound breakfast sausage (mild or spicy)
  • 2 tablespoons all-purpose flour
  • 1 ½ cups whole milk
  • Salt & black pepper to taste
  • Pinch of cayenne or paprika (optional)

🧾 Ingredient Notes:

  • Pizza Dough: Use store-bought for convenience or make your own if you prefer a from-scratch base.
  • Sausage: Breakfast sausage gives that classic flavor — pork or turkey works.
  • Cheese: Use a blend for the best melt and flavor. Add pepper jack for heat.
  • Eggs: Cook just until soft-scrambled so they don’t overcook in the oven.

👩‍🍳 Instructions:

1. Preheat Oven:

  • Preheat to 425°F (220°C). Lightly grease or line a baking sheet with parchment paper.

2. Make the Sausage Gravy:

  • In a skillet over medium heat, brown the sausage until fully cooked. Do not drain the fat.
  • Sprinkle in the flour, stir to coat, and cook 1–2 minutes.
  • Slowly whisk in the milk and cook, stirring frequently, until thickened (5–7 minutes).
  • Season with salt, pepper, and cayenne. Set aside.

3. Scramble the Eggs:

  • In a bowl, whisk eggs with milk or cream.
  • In a nonstick skillet, melt butter over medium heat. Add eggs and cook, stirring gently, until soft-scrambled. Remove from heat.

4. Assemble the Pizza:

  • Roll out your pizza dough on a floured surface into a 12–14″ round or rectangle.
  • Transfer to baking sheet or pizza stone.
  • Spread sausage gravy over the dough, leaving a ½-inch edge.
  • Top with scrambled eggs, mozzarella, and cheddar cheese.
  • Add crumbled bacon or other toppings if using.

5. Bake:

  • Bake for 12–15 minutes, or until crust is golden and cheese is melted and bubbly.

6. Finish and Serve:

  • Garnish with chopped chives or green onions.
  • Slice and serve hot!
