Grilled Chicken with Rice, Beans & Fresh Salad

For Grilled Chicken

2 chicken breasts (boneless)

2 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

½ tsp black pepper

½ tsp salt

1 tsp lemon juice
-
½ tsp dried oregano or mixed herbs
For Rice

1 cup basmati rice
-
2 cups water
-
Salt to taste
-
1 tsp butter or oil (optional)
For Beans
-
1 cup boiled kidney beans or black beans
-
1 small onion (chopped)
-
1 tbsp oil
-
Salt & black pepper to taste
-
Pinch of cumin or paprika
For Fresh Salad
-
Cucumber (sliced)
-
Tomato (chopped)
-
Lettuce
-
Onion (optional)
-
Lemon juice
-
Salt & black pepper
👩🍳 Instructions
1️⃣ Marinate Chicken
Mix olive oil, spices, lemon juice, and herbs. Coat chicken well and rest for 30 minutes.
2️⃣ Grill Chicken
Grill on pan or BBQ for 5–7 minutes per side until golden and cooked through.
3️⃣ Cook Rice
Wash rice, add water and salt. Cook until fluffy.
4️⃣ Prepare Beans
Heat oil, sauté onion, add beans, spices, and cook for 5 minutes.
5️⃣ Make Salad
Mix vegetables, lemon juice, salt, and pepper.
