🛒 Ingredients

4 chicken thighs or breasts (bone-in preferred)

500 g baby potatoes, halved

250 g green beans, trimmed

4 cloves garlic, minced

3 tbsp olive oil
-
1 tsp dried thyme
-
1 tsp dried rosemary
-
1 tsp dried oregano
-
½ tsp paprika
-
Salt & black pepper, to taste

1 tbsp lemon juice (optional)

Fresh parsley, chopped (for garnish)
👩🍳 Instructions

Preheat oven to 200°C (400°F).

Prepare seasoning
In a small bowl, mix olive oil, garlic, thyme, rosemary, oregano, paprika, salt, and pepper. -
Arrange pan
Place chicken and potatoes on a large baking tray. Toss with half the garlic-herb oil. -
Bake (first round)
Roast for 25 minutes, turning potatoes halfway. -
Add green beans
Remove tray, add green beans, drizzle remaining oil, and lightly toss. -
Bake again
Return to oven for 15–20 minutes, until chicken is golden and cooked through (internal temp 75°C / 165°F). -
Finish & serve
Drizzle with lemon juice, garnish with parsley, and serve hot.
