One-Pan Garlic Herb Chicken with Potatoes & Green Beans

🛒 Ingredients

  • 4 chicken thighs or breasts (bone-in preferred)

  • 500 g baby potatoes, halved

  • 250 g green beans, trimmed

  • 4 cloves garlic, minced

  • 3 tbsp olive oil

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 tsp dried oregano

  • ½ tsp paprika

  • Salt & black pepper, to taste

  • 1 tbsp lemon juice (optional)

  • Fresh parsley, chopped (for garnish)


👩‍🍳 Instructions

  1. Preheat oven to 200°C (400°F).

  2. Prepare seasoning
    In a small bowl, mix olive oil, garlic, thyme, rosemary, oregano, paprika, salt, and pepper.

  3. Arrange pan
    Place chicken and potatoes on a large baking tray. Toss with half the garlic-herb oil.

  4. Bake (first round)
    Roast for 25 minutes, turning potatoes halfway.

  5. Add green beans
    Remove tray, add green beans, drizzle remaining oil, and lightly toss.

  6. Bake again
    Return to oven for 15–20 minutes, until chicken is golden and cooked through (internal temp 75°C / 165°F).

  7. Finish & serve
    Drizzle with lemon juice, garnish with parsley, and serve hot.
